Celebrity chef Nick Nairn will launch a completely gluten free cookery course at his culinary school this summer.
The Back Wynd cookery school, which offers courses in all manner of culinary disciplines, has recently seen a rise in the number of participants looking for gluten free alternatives to classic dishes.
Predominantly present in wheat products such as bread, pasta and cakes, gluten is often avoided for health reasons, with suffers of coeliac disease forced to cut it completely from their diets to alleviate symptoms.
With recent figures suggesting that as many as one in 100 people suffer from coeliac disease, Nick has decided to launch a three hour class in August with an Italian-inspired gluten free menu.
Nick said: "We've noticed increasing numbers of people coming on our courses who want to avoid gluten in their diet.
"However there is no reason why they should miss out on delicious food because of this.
"We've designed a menu that delivers great taste but does away with gluten entirely."
The two course class will see participants tackle a lightly spiced gnocchi dish with smoked haddock cream sauce and for dessert, a chocolate, almond and pear torte with red wine syrup and amaretto sabayon.
Although the class is perfect for someone on a gluten free diet who wants to learn more about what foods they can and cannot cook for themselves, it is also suited to those who are changing habits in the kitchen to accommodate others.
Nick added: "We will have plenty of information available to give people more confidence to be able to cook gluten free at home."
And whilst the menu may be coeliac friendly, Nick explains that the dishes do not scrimp on flavour despite the lack of gluten.
He said: "It may be a special menu but you would never know it, so it is perfect for those avoiding gluten but also for everyone else as well."
The Gluten Free Italian Course takes place on August 14 from 1.30pm until 4.30pm and costs £79 per person.
